Winemaking

Traditional with de-stemming. Fermentation and vatting for 12 days with alternating pumping over and punching down to gently extract all the fruit's potential, at a temperature of 23/25°C.

Breeding

On fine lees after racking from malolactic fermentation, to stabilize fruit and fat. Racking in early spring.

Fresh and fruity after a slight aeration, revealing lovely aromas of tart red fruits.

Delicate, light and acidic, with fruit in the middle, supple and pleasant tannins, nice volume.

A pure, fruity nose. Pleasant attack on the palate. mid-palate a little hollow but quite a long finish on light spices. it's good to be able to rediscover grape varieties.
