Slow, gentle pressing to obtain musts of great purity, fermentation in wooden vats and barrels with regular but measured stirring on fine lees.
Breeding
Vinification and ageing on fine lees for 14 months, 29hl in 15-year-old wooden vats and the rest in 2 x 500L 3-wine barrels, with regular stirring of the lees.

Intense and complex, fruity and spicy aromatic structure, explosive aromas of candied apricot, quince paste, sweet orange, notes of nutmeg and gingerbread, floral touches (lime blossom, chamomile) and fine notes of citrus and exotic fruit (mandarin orange, roasted pineapple).
Mouth
Finesse and liveliness with great volume and good acidity, notes of mirabelle plum, spices (cinnamon), good tension and a hint of bitterness (tangerine) for a long finish.

About the domain :
Under the impetus of Juliette d'Assay, Tracy is an emblem of the Pouilly-Fumé appellation. Overlooking the Loire, its vineyards are devoted to Sauvignon Blanc, the estate's specialty. The different types of soil, ranging from flinty clay to marl and limestone, make it possible to produce several cuvées imbued with these terroirs, all of which are sure-fire values that never disappoint. Everything is in progress, and the prestige cuvées are impressive. An estate to watch closely.

An outstanding Sauvignon with a complex nose and notes of gingerbread. The palate is seductive, very classy, with great volume. Great experience to taste this wine.
