Domaine de l'Aster
Created in 2014, the Aster estateThe estate is now run by the 16th generation of winegrowers. After an interlude as exclusive cooperator from 1932 to 2014, a return to the family winegrowing tradition took place with the creation of the Aster estate. Today, Vincent (son of Jacques) manages around 8 hectares of vines in the heart of the Pézenas terroir. From basaltic to schist, Villafranchian to Miocene, the estate's vineyards boast a rich mosaic of soils. Thirteen different types of soil rub shoulders and intermingle, and their complementarity is a definite advantage in winemaking, providing complex aromatic profiles and extremely fine tannins.

"This cuvée confirms year after year that it is a benchmark for the appellation, despite its low price. Stemming, as its name suggests, from a basaltic terroir, it reveals subtle smokiness, notes of camphor, licorice and offers a very fine, graceful mouthfeel. A great success. "La Calade? The name given in the South of France to a sloping stone-paved street, such as the one Jacques Bilhac used to walk to school. It has earned him a second Favorite after the one obtained for the 2015 vintage. There's no need to get formal about the reserved nose of blackcurrant and licorice: the fruit and garrigue come to the fore in an intense, refined, caressing, fresh palate, supported by firm, finely sculpted tannins.
