Each vineyard has a different type of soil and microclimate, giving eachElephant Hill wine its own personality. The terroirs are adapted according to the grape varieties planted, and are composed of clay pebbles on very old stony river beds.
Elephant Hill recycles the winery's waste water using its own biological water treatment system, to obtain clean, high-quality water. Wild flowers have been planted in the vineyards, not only for aesthetic reasons, but also to attract insects useful for biodiversity. All 3Elephant Hill vineyards are certified organic by SWNZ (Sustainable Winegrowers of New Zealand).
