Aujourd'hui, soucieux de révéler le potentiel de ces magnifiques terroirs, tout en respectant l'environnement, Dominique Raimond, viticulteur passionné, met en œuvre tous les moyens techniques pour parvenir à faire de Château Montfollet un très grand vin. Les étapes des travaux viticoles répondent à de multiples exigences: diminuer la vigueur de la vigne tout en assurant sa pérennité, favoriser la maturation des raisins, respecter la faune et la flore environnante, cultiver les sols sous le rang et enherber naturellement entre les rangs. La taille est sévère, l'effeuillage et l'éclaircissage permettent une excellente maturité des grappes. Enfin, la lutte contre les maladies et les ravageurs est raisonnée afin de préserver l'environnement et le vignoble du Château Montfollet.
A l'approche des vendanges, un suivi journalier détermine la date optimale de récolte, parcelle par parcelle. Au Château Montfollet, le suivi des vinifications est effectué par le maître de chai, oenologue diplômé de Bordeaux, aidé d'un œnologue-conseil reconnu dans la région bordelaise, Christian Veyry.
