Visit Domaine Jean-Marie BouzereauThe grapes are harvested by hand when ripe, but not overripe. The reds are sorted, destemmed and macerated for a few days before fermentation begins, without yeast. The wine is aged in barrels for varying lengths of time, depending on the cuvée and the vintage. The whites are racked after 24 hours of settling: they ferment in barrels without yeast and remain on the lees until the following summer. The use of new barrels remains very moderate, varying from 10 to 30% depending on the cuvée.
