Grapes pressed directly and juice placed in static settling, clear juice then racked into oak barrels (1 to 3 years old) for alcoholic and malolactic fermentation.
Breeding
11 months in barrel, followed by 5 months maturing in stainless steel tanks (stirring frequency adapted to the characteristics of the vintage).

About the domain :
In 1946, Francis Auvigue joined forces with three other producer friends to create a small trading house specializing in Pouilly-Fuissé. Francis's grandsons Jean-Pierre and Michel took over in the 1970-75s, developing the other appellations of the Mâconnais. In 2017, the company took over a 7-hectare vineyard and moved into the old church in Fuissé, which had been converted into a wine-making and tasting and sales facility. Today, Sylvain Brenas, Francis' great-grandson, and Céline Hirsh are at the helm.
