This "Vendange Tardive" is comparable to the great Sauternes sweet wines, with a high level of residual sugar. Here, it's all about taking your time to obtain the most concentrated juice possible: late apples passerillées for 2 months, slow pressing (24 hours) and 6 months' fermentation in oak barrels. Great finesse of bubbles and aromatic complexity.
