Spirale is a rich, luscious liquoreux from several months of passerillage, opening with aromas of quince, dried apricot and honey. It's a very dense, concentrated wine, with beautiful fruit that leaves a remarkable freshness on the palate. A rare wine to discover!

About the domain :

Sparkling like his crémants, energetic like his whites, inviting like his reds and generous like his yellow wines, Stéphane Tissot is without doubt the driving force behind the Jura vineyards. Taking over the family domaine in 1993 with his wife Bénédicte, he has revealed the full richness of the Jura terroirs through great wines made from plot selection. The variety of the range is matched only by the quality and purity of the wines, and the winemaker's tireless experimentation. High-density stilt planting, massal selection, amphora ageing, extended maceration and sulfur-free wines are just some of the strings Stéphane Tissot has added to his bow. Some 50 hectares of biodynamic vineyards make up one of the region's most exciting estates.

About the domain :

What a journey Stéphane Tissot has made since 1990! The vineyard's conversion to organic farming began in 1999, and it is now biodynamically cultivated. Whatever the type of wine, everything is managed with talent and sensitivity, and the flavors are of perfect integrity. The Macvins are the finest in the region. The rusticity often imparted by the marcs is wonderfully melted here! The reds and oxidative wines have acquired an unforgettable finesse and freedom of tone. The rigor of the work accomplished and the kaleidoscopic depth of the range unquestionably place the domaine at the pinnacle of regional production.

White wine with raisins, like straw wine. Exceptionally rich in sugar, with obviously complex aromas of currant, honey and candied apricot. Formidable, a small bottle in size, but a great dessert moment after Philippe Vandel's 2002 Vin Jaune de l'Etoile on the Jura cheese platter.
