Sorting followed by total maceration for 12 days in temperature-controlled stainless steel vats, several pump-overs and punch-downs, then pressing: press juice and free-run juice from each cuvée blended and racked for malolactic fermentation on fine lees before transfer to barrels.

9 months in oak barrels (20% of which are new), light filtration before bottling
