In 2023, L'Ermitage du Pic Saint Loup became L'Héritage du Pic Saint-Loup. This family estate is run by Jean-Marc, Pierre and Xavier Ravaille. They have turned the estate, which after the Revolution was the kingdom of sheep, olive trees and vines, into a flagship of the Pic Saint-Loup appellation. For the Ravaille brothers, making wine means constantly striving for perfection. Leaning against the foothills of the massif, on the hills of Saint Mathieu de Tréviers, the estate has been working biodynamically for several years now, and has been committed to organic farming since 2009, certified since 2012.
In the Pic Saint Loup area, during the grape ripening cycle, thermal amplitudes are marked, particularly in summer when the days are hot and the nights cool. These variations in temperature are a particular feature of the Pic Saint Loup climate, and a factor in the typicity of the wine. The estate's vineyards Heritage du Pic Saint Loup are harvested by hand when ripe, usually in the cool hours of the morning. Here, we select fruit whose yield has been controlled at the pruning stage, and take care of it from picking to vatting, with the minimum of stress. The vinification ofHéritage du Pic Saint Loup comes as a climax. Together, the three brothers put their heart and soul into their work. Separate vinification, by terroir and grape variety. Their identity and authenticity emerge in blends aged for one or two years in vats or barrels, the wood used depending on the grape variety.
