Traditional method. When the grapes are pressed, the first juices are collected to form the heads of the cuvées. After an initial alcoholic fermentation, the wine is blended, followed by a second fermentation in the bottle. This allows the wine to foam while the bottles rest on their lees.
Breeding
24 months on laths, daily riddling, then disgorging to expel deposits, then final corking with 0 dosage.
