Crémant de Limoux

AOC Crémant de Limoux differs from Blanquette in the way it is blended and aged.
Mainly made from Chardonnay and Chenin Blanc, the blend may also include Pinot Noir and Mauzac, which together may not exceed 20% of the grape varieties.

This sparkling wine is made using the traditional method, which means that the second fermentation takes place in the bottle (just like Champagne wines). The bottles then rest on the lees for 9 months before the addition of the liqueur d'expédition, which determines the sugar content of the wine. Once the final cork has been placed, Crémants de Limoux are aged in the cellar for at least 15 months before being released for sale.

Crémant de Limoux is recognized by its pale color, very fine bubbles, white floral and citrus aromas and light toasted notes.
