Mont Baudile
The Hérault region offers perhaps the greatest diversity of Protected Geographical Indication (PGI) wines, covering almost two-thirds of the production area. Within the department, there are also more restricted areas to which a decree has granted specific PGIs. Such is the case of Mont Baudile. TheMont Baudile PGI is therefore subject to the same specifications as the Hérault PGI, but concerns a geographical area limited to a dozen communes at the foot of Mont Saint-Baudille.

The Hérault department forms a vast amphitheatre facing the Mediterranean Sea. Protected by Mont Saint-Baudille, the Mont Baudile PGI enjoys a Mediterranean climate that is particularly favorable to vine-growing. It is characterized by hot, dry summers and mild winters, with two rainy periods in autumn and spring.

Mont Baudile PGI wines are produced from traditional Mediterranean grape varieties such as Carignan, Syrah, Cinsault and Grenache for the reds, but also from other varieties, notably Merlot and Cabernet-Sauvignon. IGP Mont Baudile white wines feature Grenache blanc, Maccabeu and Terret, as well as Chardonnay, Sauvignon and Viognier. The Mont Baudile PGI also offers some admirable vintages to discover, such as those of Domaine d'Aupilhac.

This pure Languedoc cuvée is made from autochthonous grape varieties, with 90% Carignan and 10% Marselan, using carbonic maceration to preserve the crispness of the fruit and freshness. It offers a gourmet wine for immediate pleasure without neglecting structure. This "buddy" wine is ideal with charcuterie and grilled meats.
