Domaine Patrick Baudouin is a family estate located in Chaudefonds-sur-Layon. Patrick Baudouin is the fourth generation to manage a vineyard with 13.5 ha of vines in production. DomainePatrick Baudouin began converting its vines to organic farming in 2002. Any new parcel rented or purchased is immediately put into conversion, if it is not organic. Since 1997, Patrick Baudouin has been working the soil, abandoning chemical weedkillers and, from 2001, banning synthetic treatments. Since 1994, no wine has been chaptalized, with only minimal doses of sulfur added to the initial grape juice.
