\r\n \r\nDomaine de Bellivière 's vineyards are farmed organically, and since 2008 have been certified Demerter biodynamic. The vines are cultivated (ploughing, scraping) without weedkillers or chemical fertilizers. Massal selection plantings are deliberately designed to be high-density, more qualitative, so as to better occupy rare and valuable terroirs. AtDomaine de Bellivière, the grapes are harvested entirely by hand, and yields are resolutely moderate to ensure that only the finest berries are picked at optimum ripeness. This quest for ripeness, a constant concern of Eric Nicolas, results in wines with varying levels of residual sugar, offering tasty nectars ranging from dry to mellow.","Since 2016, a second structure (négoce) Les Arches de Bellivière has been created, enabling us to cope with successive episodes of frost in the region. The team turned to a sustainable partnership with a winemaker from Mont-Ventoux, with a similar approach of certified biodynamic vineyard management and values closest to the Nicolas family. The harvested grapes (Grenache and Aubun) are then vinified in the estate's cellars to produce red and rosé wines.
