Séverin and Gilles Chollet
Gilles and Séverin Chollet, winegrowers from father to son, own an estate of over 12.5 hectares in 2 communes of the Nivernaise region. For over 60 years, this family estate has been producing white wines in the Pouilly-sur-Loire and Pouilly-Fumé appellations. The Chollet vineyard benefits from clay-limestone and sandy soils, producing elegant wines with finesse and a fruity mouthfeel. Concerned about the environment and a new, more ecological way of growing, Domaine Chollet in Pouilly-sur-Loire has gradually turned to organic farming, which is in the process of conversion.

Bearing the imprint of Kimmeridgian marls, this cuvée, comparable to a "grand cru", will reveal its full potential over time. Initially, the fruity character of the Sauvignon will express itself in the first few years, but it will be worth waiting a few years in the cellar for the terroir effect to take over. Great ageing potential!

"High expression of Sauvignon

Here, Sauvignon takes root on the limestone slopes north of Pouilly, drawing all its typicality from the "Caillottes" soils. On the nose, the wine expresses white-fleshed fruit and citrus with a marked aromatic intensity. The mineral character of this cuvée adds complexity and length to the wine. Very typical!
