Bearing the imprint of Kimmeridgian marls, this cuvée, comparable to a "grand cru", will reveal its full potential over time. Initially, the fruity character of the Sauvignon will express itself in the first few years, but it will be worth waiting a few years in the cellar for the terroir effect to take over. Great ageing potential!

Harvest

At optimum maturity

Winemaking

Cold settling (7°) for 48 hours and alcoholic fermentation in temperature-controlled stainless steel tanks (13-18°C). Light filtration and bottling.

Breeding

6 to 8 months on its fine fermentation lees with stirring once a week over a three-month period.

About the domain :

In the heart of Bouchot, an old Pouillyssois winegrowing village, Gilles Chollet took over from his father in 1986. He was joined by his son Séverin in 2010, who is now at the helm of this 14-hectare vineyard.
