Bearing the mark of Kimmeridgian marl, this cuvée, comparable to a "grand cru," will reveal its full potential over time. Initially, the fruity character of Sauvignon comes to the fore in the first few years, but it will be interesting to wait a few years in the cellar for the terroir effect to take over. Excellent aging potential!

Cold settling (7°C) for 48 hours and alcoholic fermentation in temperature-controlled stainless steel vats (13-18°C). Light filtration and bottling.

About the estate:

In the heart of Le Bouchot, an old wine-growing village in Pouilly-sur-Loire, Gilles Chollet took over from his father in 1986. He was joined by his son Séverin in 2010, who has now taken over the reins of this 14-hectare vineyard.
