Le Domaine Raspail-Ay est une propriété familiale depuis 5 générations comptant 18 hectares de vignes, aujourd'hui dirigés par Dominique Ay. Les parcelles d'un seul tenant entourent les bâtiments viticoles du Domaine Raspail-Ay, eux-mêmes situés a l'entrée de Gigondas. Le terrain est de type argilo-calcaire exposition Est-ouest, au service des cépages structurants de l'appellation (grenache noir, syrah et mourvèdre) âgés en moyenne de 45 ans. Dans la tradition culturale du domaine, adaptée au fil du temps aux conditions naturelles remarquables, le vin issu de la propriété est exclusivement en AOC Gigondas (rouge et rosé) au service de l'expression du terroir.
Au Domaine Raspail-Ay, le raisin est vendangé à la main, trié sur ceps puis égrappé pour fermenter lors de cuvaisons longues (environ 1 mois) dans les cuves familiales. Le vin du Domaine Raspail-Ay est ensuite élevé entre 18 et 24 mois en vieux foudres de chêne, contenances de 40 à 130 hectolitres. C'est donc 2 ans après la récolte du raisin que le Gigondas rouge du Domaine Raspail-Ay est disponible pour la dégustation. D'un nez de garrigue et d'une robe rubis, l'équilibre en bouche se situe entre une structure de fruits cuits ou épices et une finesse des tanins. Le vin peut être consommé 3 ou 4 ans après (et selon) le millésime jusqu'à 15 voir 20 ans.
