Domaine Raspail-Ay
Domaine Raspail-Ay has been a family estate for 5 generations, with 18 hectares of vines, now managed by Dominique Ay. The single plot of land surrounds the Domaine Raspail-Ay winery, which is located at the entrance to Gigondas. The east-west-facing clay-limestone soil supports the appellation's main grape varieties (Grenache noir, Syrah and Mourvèdre), which are on average 45 years old. In keeping with the estate's tradition of cultivation, adapted over time to the remarkable natural conditions, the wine produced on the estate is exclusively AOC Gigondas (red and rosé), in keeping with the expression of the terroir.

At Domaine Raspail-Ay, the grapes are harvested by hand, sorted on the vine, then destemmed and fermented during long vatting periods (around 1 month) in family vats. Domaine Raspail-Ay wine is then aged for 18 to 24 months in old oak foudres, with capacities ranging from 40 to 130 hectolitres. Domaine Raspail-Ay red Gigondas is available for tasting 2 years after the grape harvest. With a nose of garrigue and a ruby-red color, the balance on the palate is between a structure of cooked fruit or spices and fine tannins. The wine can be drunk 3 or 4 years after (and depending on) the vintage, up to 15 or 20 years.
