Whole bunch pressed, fermented in old barrels for 2 months

Breeding

12 months on lees (same containers as during fermentation), then 6 months in vats on fine lees, unfined and unfiltered.

About the wine:

Much smokier and reduced on the nose than the 2022. Much more restrained by taut acidity and iron-tight savory notes. Bread, bee pollen, saffron and cooked rice. I'd hold on to it for at least a few years. 2026-2032
