"A Cérons in all its splendour: fresh and balanced".

The 2018 vintage played with the team's phlegm. The first 6 months of the year were marked by incessant rainfall and mild temperatures. On July 15, the vintage took a 180-degree turn with a very hot summer marked by drought. The harvest lasted from the end of August to the end of October, with a very fine ripening of the grapes. grapes. The exceptionally long harvest, with no rainfall, made it possible to harvest à la carte. à la carte. In the cellar, the juices are very homogeneous and have a beautiful color. This is an unprecedented vintage which , despite despite the extreme conditions, in the tradition of great years.

Terroirs

Clay-gravel soils, limestone subsoil with marine asteria. The 35-year-old vines grow on a limestone plateau overlooking the village.

Harvest

Exclusively hand-picked by successive selections. The grapes are picked after over-ripening and the progressive invasion of Botrytis Cinerea, the fungus responsible for the natural concentration of the grapes (noble rot). Botrytized berries are mostly harvested at the "roasted rot" stage, to achieve the aromatic balance and freshness characteristic of Cérons wines.

Winemaking

Very slow pressing in increasing stages and extraction of pellicular aromas. De-sedimentation then entonnage and start of natural fermentation in barrels.

Bright yellow with green highlights. The nose is elegant, with retained fruit, apricots, peaches, lemon zest, candied orange peel in the background, and hints of vanilla. The palate is well structured, with good tension and length.

Elegant bottle. Intense yellow to straw-gold color. On the palate, a fruit basket dominated by flavors of apricot, exotic fruit and candied citrus. In the background, soft notes of vanilla, honey and caramel recall careful vinification and long barrel ageing. The result is a deep, dense 2018 Cérons from the outset, with roundness, finesse and style all the way through. I love the way it rises with room temperature, as recommended by 1J1V! A smart, low-cost alternative to classic Sauternes. A festive foretaste for an aperitif with toasts of whole mi-cuit foie gras from Périgord duck.
