Clos Manou est la propriété de Françoise et Stéphane Dief, deux passionnés qui ont vinifié leur premier millésime en 1998. En 15 ans, le vignoble est passé de 12 acres à 18 hectares, avec une philosophie : produire ce qui se fait de mieux, faire ressortir la qualité coûte que coûte, autant dans la vigne que dans le vin ; toujours rechercher un équilibre entre tous les ingrédients constitutifs du métier de vigneron ; savoir puiser dans la tradition autant que dans la modernité.
Trois terroirs de styles bien différenciés mais complémentaires, constituent à parts égales le vignoble de Clos Manou : des Graves profondes sur argile situées en bordure de l’estuaire de la Gironde, des Graves sableuses situées en bas de pente, et de l'argile sur calcaire situé sur la commune de Couqueques. La vigne est cultivée selon les préceptes de la culture biologique, par des soins attentifs et raisonnés. Les vendanges sont manuelles et les vinifications sont effectuées à basse température ; les extractions sont faites par remontage dans le cuvier béton et uniquement par pigeage manuel dans le cuvier bois.
Clos Manou est élevé 17 mois en barriques neuves exclusivement en bois d’Origine France, et la seconde cuvée, Petit Manou, 12 mois dans les barriques servant au premier vin.
