Slow, gentle pressing, fermentation at a controlled temperature of between 18° and 20°C to respect the delicate aromas of Aligoté.
Breeding
In stainless steel tanks on lees, 20% in tuns. Bottled during the summer to preserve the freshness and liveliness typical of the grape variety.

Food and wine pairing
Offering lemony notes to oysters, it also pairs well with tarama and steamed or au gratin shellfish. Its sharp roundness sublimates veal and poultry in white or creamy sauce, and mushroom risottos. Ideal as an aperitif with gougères, or with starters: parsley ham, mixed salads, quiches... A perfect accompaniment to most goats' cheeses, including Beaufort, Comté and Cîteaux.

The nose is discreet and the palate very well balanced, with controlled ageing. The wine is truly typical of the appellation, with notes of toast and hazelnut.
About the domain :
With 80 hectares, Maison Chanzy is one of the most important producers on the Côte Chalonnaise, producing both proprietor- and negociant-owned wines from the Côte Chalonnaise to the Côte de Nuits. The company is owned by a group of passionate investors and shareholders, ready to take the company to the next level. The Jessiaume family runs the technical side of the estate, practicing "bioraisonnée" viticulture and proteodie in the cellar, where the wine reacts to musical frequencies during fermentation. The results are interesting, and even if a few inaccuracies remain, we've detected some fine cuvées.

About the domain :
Based in Bouzeron, of which he alone owns half the vines, this 80-hectare estate (in the Côte Chalonnaise, with a foothold in Côte de Beaune and Côte de Nuits) has been run since 2013 by Jean-Baptiste Jessiaume, its manager and cellar master, who comes from a line of Santenay winemakers. A trading house completes the estate. An original feature: malolactic fermentations are carried out to music, the harmonic resonance of which is thought to encourage the grapes to blossom.
