About the domain :
The Domaine owns twenty-two hectares of vines, including eight hectares of red Chorey and one hectare of white Chorey, the rest are spread over Savigny, Aloxe-Corton, Beaune and Pernand-Vergelesses. The entire harvest is bottled bottled. Pascal Arnoux and his wife Caroline are now assisted by their son Jean-Baptiste in the vinification and their daughter Audrey for marketing and communications. Since 2014, the new stainless steel vats with thermoregulation, to better control fermentation temperatures. The soils are ploughed, and the grapes are harvested by hand, with a sorting table at harvest reception. The whites are aged for ten months, with 10% new barrels. The reds benefit from a three-week vatting period twelve months (10% new barrels for village appellations, 20% for premier crus). In certain years, the quality of the grapes allows us to keep around 20% of the whole harvest, balance is always important; we want to promote aromatic complexity while preserving substance, the tannins must hold the wine together". the wine".

About the domain :
Founded in 1950, this family-run estate in Chorey-lès-Beaune has been run since 2008 by Pascal Arnoux, 3rd in line to head the domaine. On the menu is a wide range of Côte de Beaune wines (some twenty appellations over more than 20 ha between Beaune and Corton), often featured in these pages.
