A 12-month ageing period in oak barrels adds a spicy touch to this elegant, supple and complex cuvée. Harvest
By hand, in 10 kg crates, removed from the vines with wheelbarrows to avoid any settling of the harvest before it reaches the winery.
Winemaking
Harvest sorted on a vibrating sorting table, de-stemmed and vinified traditionally in open vats (4-5 g/hl SO2). No yeast is added, and the musts spend 5 to 10 days in cold prefermentary maceration for a total vatting time of 15 to 21 days.
Breeding
The wines are aged for 12 months on the fine lees of alcoholic fermentation, and undergo malolactic fermentation in barrel. In order to preserve the wines' aromatic profile, they are aged on lees: no racking is carried out.

About the domain :
Clos Salomon, a 7-hectare monopole, bears the name of its owners since the 14th century, and is managed by their descendants, the du Gardin family. Ludovic du Gardin is the guardian of this prestigious clos, which he cultivates in an organic spirit, with carefully tended vines, no weedkillers or insecticides, and ploughed soils. The wines are matured for 12 months, offering good ageing potential. In addition to the clos-salomon with its clearly identified terroir, two cuvées are available in chardonnay, a montagny le-clou and a givry premier cru la-grande-berge. The estate is one of the few sectors to have suffered frost in 2017, which resulted in more concentrated wines due to low yields.

About the domain :
The estate owes its name to the Salomon family, who acquired it in 1538 and passed it on, just under a century later, in 1632, to the Gardin de Séveirac family. Since 2016, it has been managed by Ludovic du Gardin. The vineyard consists of a clos, a historic monopole in Givry red premier cru, plus two parcels of Chardonnay: La Grande Berge, premier cru de Givry (0.40 hectares) and 2 hectares in Montagny. Small yields, working with and respecting the soil, everything is done to get the best out of the terroirs. Once again this year, we salute his consistency.
