Vinified from purchased grapes, the bunches are pneumatically pressed, and the juices are put through static settling for 12 hours. The clear juices are then transferred to stainless steel tanks for alcoholic and malolactic fermentation, under temperature control.

This Mâcon delivers a most interesting olfactory package: it skilfully blends honeysuckle and honey with toast in a fruity environment. The palate is complex, developing around a rich body, while the final acidity brings freshness.
About the domain :
In 1946, Francis Auvigue joined forces with three other producer friends to create a small trading house specializing in Pouilly-Fuissé. Francis' grandsons Jean-Pierre and Michel took over in the 1970-75s, developing the other appellations of the Mâconnais. In 2017, the company took over a 7-hectare vineyard and moved into the old church in Fuissé, which had been converted into a wine-making and tasting and sales facility. Today, Sylvain Brenas, Francis' great-grandson, and Céline Hirsh are at the helm.
