Winemaking
Whole-bunch pressing by pneumatic press, the musts are statically settled for 24 hours. The clear juices are then transferred to barrels for alcoholic and malolactic fermentation using indigenous flora.
Breeding
11 months on the lees in oak barrels with regular stirring, the frequency of which is adapted to the characteristics of the vintage.

About the domain :
In 1946, Francis Auvigue joined forces with three other producer friends to create a small trading house specializing in Pouilly-Fuissé. Francis's grandsons Jean-Pierre and Michel took over in the 1970-75s, developing the other appellations of the Mâconnais. In 2017, the company took over a 7-hectare vineyard and moved into the old church in Fuissé, which had been converted into a wine-making and tasting and sales facility. Today, Sylvain Brenas, Francis' great-grandson, and Céline Hirsh are at the helm.
