Saint-Bris
The Saint-Bris appellation d'origine contrôlée is a village appellation in the Auxerrois vineyards of the Yonne department. This appellation is reserved exclusively for white wines produced within the Saint-Bris appellation delimited area. It was created by decree on January 10, 2003, replacing the former Sauvignon de Saint-Bris appellation. The communes of production concerned by the Saint-Bris AOC are : Saint-Bris-le-Vineux, Chitry, Irancy, Quenne and Vincelottes.

Saint-Bris wines benefit from a wide range of Jurassic soils, from Portlandian to Kimmeridgian. The terroir lies on astartes limestone (Lower Kimmeridgian) at the edge of the Yonne alluvium and at the foot of marl-limestone slopes. The best locations for this wine are on hillsides with northern exposure, giving it ideal ripeness and fruitiness.

AOC Saint-Bris produces exclusively white wines from Sauvignon and Sauvignon Gris grapes. Sauvignon is grown in Burgundy only in the Saint-Bris-Le-Vineux region. This vigorous variety produces compact bunches with small, ovoid berries that are a beautiful golden yellow when ripe, with thick skins and melting pulp. This Burgundian terroir produces dry, light, fresh and very pleasant white wines. Saint-Bris wine lovers will particularly appreciate the wines offered by Domaine William Fèvre and Domaine La Chablisienne.

This pretty Saint-Bris perfectly expresses the grape variety from which it is made (100% Sauvignon) and the limestone soil of the appellation's plateaux. Intense and fresh on the nose, it is marked by notes of blackcurrant buds. The palate is fresh and silky, expressing itself with spontaneity. A wine of exquisite lightness!

This pretty Saint Bris made from 100% Sauvignon (a Burgundian speciality) opens with a lovely fruity bouquet featuring citrus notes, grapefruit, lemon and a touch of vine peach. The palate is frank, taut and greedy, with fruity and floral notes. The finish lingers on an almost saline minerality... Great value for money!

This white represents the only Burgundy appellation to produce a 100% Sauvignon Blanc! A fresh wine, opening with white flowers and citrus, with a predominance of Muscat. It confirms this first impression of freshness and lightness, with a lovely lemony persistence on the palate... Still excellent value for money!
