De-stemming followed by light crushing, slow, low-pressure pneumatic pressing, slow alcoholic fermentation in temperature-controlled stainless steel vats for 70% and in 600 L demi-muids for 30% of the cuvée, followed by malolactic fermentation in the respective containers.

About the domain :
Domaine du Mont Épin is the second estate of brothers Richard and Stéphane Martin, of Croix Sénaillet de Davayé, acquired in 2015 and whose vines are located around Mont Épin. It comprises 15 hectares divided into four terroirs and two appellations, Mâcon-Péronne (seven hectares) and Viré-Clessé. The estate is converting to organic farming to maintain the same philosophy as Davayé, and the wines come in two cuvées for Péronne and two for Viré-Clessé, with a rather charming style thanks to ripe harvests. Perfect for gastronomy.
