About the wine:
This Champagne, which has already been honored by the Guide, uses the three Champagne grape varieties in proportions that vary somewhat from one version to the next (for this one: meunier 50%, chardonnay 35%, pinot noir 15%). Discreet on the nose, slightly vegetal and empyreumatic, on the palate it shows an assertive personality. Intense, frank, rich and complex, it combines honeyed aromas with fresh touches of verbena and mint.
About the domain :
Winegrowers since 1854, established in a valley near the Marne valley, the Payers are proud to be among the twenty-four founders of the Coopérative régionale des vins de Champagne in 1962 (see Jacquart, de Castelnau), which still produces two of their cuvées, even though they have become récoltants-manipulants. Ghislain Payer has handed over the 4 ha vineyard to his daughter Élise in 2019.
