This champagne, which has already been honored by the Guide, combines the three Champagne grape varieties in proportions that vary slightly depending on the version (for this one: 50% Meunier, 35% Chardonnay, 15% Pinot Noir). Discreet on the nose, slightly vegetal and empyreumatic, it shows a strong personality on the palate. Intense, frank, rich, and complex, it combines honeyed aromas with the freshness of hints of verbena and mint.

About the estate:

Winegrowers since 1854, established in a small valley near the Marne Valley, the Payers are proud to be among the twenty-four founders of the Regional Champagne Wine Cooperative in 1962 (see Jacquart, de Castelnau), which still produces two of their cuvées, even though they have become independent winegrowers. In 2019, Ghislain Payer handed over the 4-hectare vineyard to his daughter Élise.
