Champagne Ghislain Payer et Fille
This family estate, located in Fleury-la-Rivière between Reims and Epernay in the Marne Valley, is now run by Elise Payer, who has inherited the estate from her father. Ghislain Payer in 2014. Cultivated with care and patience, the 4 hectares of this small production are mainly planted with Pinot Meunier (45%) and Chardonnay (45%), with a small proportion of Pinot Noir (10%). The region's well-known limestone terroir, rich in marine fossils, lends the wines their minerality. 

Ghislain Payer Champagnes are kept in the cellar for as long as it takes for the aromas to fully develop, much longer than required by Champagne regulations (15 months). As a result, non-vintage cuvées are aged for a minimum of 3 to 10 years before release.

Based on 2020, this elegant, delicate Champagne is a blend of 63% Meunier, 27% Chardonnay and 10% Pinot Noir. Fresh and fragrant with notes of citrus fruit, orange peel and white flowers, the finish is marked by hints of hazelnut and almond. Fine bubbles for a fresh aperitif!
