L'Amarone della Valpolicella est une appellation issue des vins de Valpollicella, dans la région de Vénétie. La zone particulière de cette appellation est située au nord de Vérone, entre les villages de Sant Ambrogio et de Montecchia di Corsara. L'Amarone della Valpolicella a été classe DOCG (Denominazione di Origine Controllata e Garantita) en 2009. Comme certaines célèbres recettes ou certains fameux vins, l'Amarone della Valpolicella est le fruit d'un accident, ce qui n'en fait pas moins l'un des vins les plus recherchés d'Italie.
En effet, selon la tradition, il est dit que l'Amarone est à l'origine est un Recioto "oublié" par un producteur. L'élaboration de l'Amarone della Valpolicella commence par une vendange tardive, les raisins étant alors séchés à l'air libre durant environ trois mois avant d'être pressés. Pour le Recioto, la fermentation est interrompue pour donner un vin sucré. Or, il y a 70 ans, un vigneron a omis d'interrompre la fermentation. Les sucres se sont alors transformés en alcool, modifiant le Recioto en Amarone, vin rouge sec, plus amer et d'une teneur en alcool relativement élevée (14° à 16°).
Issu des cépages de Corvina, de Rondinella et de Molinara, l'Amarone della Valpolicella est un vin de très longue garde. Fruitées les premières années, les saveurs puissantes se développent après 5 à 8 années de vieillissement. Cette "erreur" de vinification a ainsi permis d'obtenir un vin rouge d'une grande complexité, un des crus les plus appréciés d'Italie.
