Winemaking
Light skin maceration, pressing, chilling of the juice for several hours, settling and chilling of the juice with its fine lees for several days. Then temperature-controlled fermentation, without malolactic fermentation.
Breeding
On fine lees with regular stirring of the lees, Grenache gris blended at the end of winter, then aged on fine lees.
