Fermentation begins in tank but ends in barrel, with partial malolactic fermentation. Manual in 10kg crates

Winemaking

Pressing in small pneumatic presses. A third of the alcoholic fermentation takes place in stainless steel tanks, followed by malolactic fermentation in barrels. All vineyard plots and grape varieties are vinified separately.

9 months in 225L barrels on fine lees
