Reasoned, mechanical soil maintenance, debudding on all plots.

Manual in 10kg crates
Winemaking
Pressing in small pneumatic presses. 80% in temperature-controlled vats, settling, fermentation at 14°C. 20% in 3-wine barrels, light settling, natural fermentation at 20°C.
Breeding
10 months in 225L barrels on fine lees
