Visit Clos Centeilles nestled in the foothills of the Montagne Noire in Siran, is an estate run by a passionate and passionate winemaker, Patricia Boyer-Domergue, who now shares her heritage with her daughter Cécile. Now in the process of handing down their heritage, mother and daughter produce wines that are off the beaten track, precise and steeped in history, and imbued with a unique emotion. 

Patricia Boyer-Domergue bought Clos Centeilles in Siran in 1990 with a vision to save the Languedoc's winegrowing heritage. In 1995, she began reintroducing the region's forgotten grape varieties, autochthonous varieties that she wanted to save from oblivion. The result of a long-term, counter-current effort, the 12-hectare estate now includes 23 different grape varieties, creating impressive diversity and originality. Clos Centeilles is located in the delimited territory of the Minervois appellation, including Cru La Livinière. The traditional grape varieties of the region: Cinsault, Mourvèdre, Syrah, Grenache noir and blanc, Clairette blanc, Carignan noir. But rarer and sometimes forgotten are Riveyrenc blanc et gris, Riveyrenc noir et verdal, Araignan blanc, Clairette rose, Picpoul gris et noir, Terret gris, Grenache gris, Lledoner Pelut, Aramon gris, Carignan gris, Œillade noire, Morrastel noir à jus blanc. A point of honor for Patricia Boyer-Domergue, the expression of the region's greatest grape variety, which she considers to be the Pinot Noir of the Languedoc: Cinsault. 

The wines are driven by this originality, thanks to well-mastered blends. The vineyard is managed in harmony with nature, certified HVE (Haute Valeur Environnementale), worked entirely by hand, and the cellar work is low-intervention, with no barrel ageing to respect the expression of the Centeilles terroir and its old grape varieties to the end. To discover these 14 cuvées is to enter a world of their own, with their own signature, a palette of authentic flavors, for a journey back to the Languedoc of yesteryear, where the diversity of grape varieties created a unique identity and the right balance.

"The soul of the estate

Patricia Boyer-Domergue considers Cinsault to be the noblest grape variety in Languedoc, in the same way as Pinot Noir in Burgundy. Vinified like a great red wine for laying down, it expresses all its elegance and finesse thanks to a masterful process. The palate is delicate and silky, with crisp, spicy and garrigue notes. A must-have from the estate!

This cuvée reveals the originality of Languedoc's forgotten grape varieties, the result of a lifetime of winemaking: Piquepoul Noir, Riveirenc Noir, Morastel Noir à jus blanc and Oeillade. This original red reveals complex aromas of raspberry, morello cherry, hints of licorice, garrigue and blood orange. Full-bodied, deep and well-structured on the palate, with fine, supple tannins and a hint of spice. A must-try!

In this charming vintage, the Cinsault is worked alone, macerated for 8 weeks. A charming wine, with a superb, generous nose of stewed black fruit. The palate is suave and full-bodied, with silky, delicate tannins, the fruit melting into the mellowness of the alcohol. A wine of great elegance that will delight lovers of fine emotions!
