About the wine:

This white combines three forgotten local grape varieties: Ribeyrenc blanc, Ribeyrenc gris and Araignan blanc. The aromatic register focuses on herbal infusions of lemon balm, verbena and lime blossom. Full-bodied on the palate, with a fresh, lingering finish of ginger and mint.

About the domain :

This original estate, set in the poetic environment of the Causse de Siran, is run by Cécile Boyer-Domergue, assisted by her mother Patricia. Their wines are the result of exemplary probity, focused on the cultivation of rare or forgotten grape varieties. The fruit expression on the nose is always a little candied, while on the palate the wines display a rare elegance and great finesse of texture, especially the pure Cinsaults. The grand cuvées are only sold at their peak. The domaine produces a lovely dry white wine based on forgotten varieties: araignan blanc, riveyrenc blanc and gris, as well as a passerillé harvest, Erme, in the spirit of the "noble wines" once made in Minervois. The uniqueness and strength of this winemaking and memorial initiative are to be commended, as it provides a vital landmark not only for Minervois, but for the Languedoc region as a whole.
