The grapes are picked slightly overripe.
Winemaking
The grapes are harvested slightly overripe, destemmed, then put into fermentation. Gentle, high-quality extraction takes place during daily temperature-controlled pumping-over. Daily tastings determine the end of post-fermentation maceration.
Breeding
Aged in new French oak barrels for 12 months for 10% of the cuvée

The nose reveals aromas of garrigue and spices, delicately wooded.
Mouth
Warm, full and velvety on the palate. Pronounced tannins counterbalanced by subtle acidity. Beautiful complexity. A great wine, subtle and perfectly balanced.

Too much alcohol and candied fruit aromas, impression of drinking a Gigondas or other Rhône du Sud, seems better the next day but first impression a little disappointing.
