Light, fine, delicate bubbles from Gamay noir with white juice. This cuvée will put everyone in agreement. The delicate nose blossoms with aromas of raspberry and redcurrant, lightly lemony. Creamy and light on the palate, with a fine balance between freshness and sweetness. An original, gourmand and fruity bubble, to be enjoyed chilled as an aperitif or with a chocolate dessert such as a black forest.

Winemaking
Direct pressing, cold settling, no sulfiting. Alcoholic fermentation at low temperature (around 16°C), stopped by chilling to 5°C when around 45 grams of unfermented sugar per liter remain. The musts are bottled after light filtration, without the addition of any inputs.
Breeding
Second fermentation in bottle for about 3 months. Disgorged under isobarometric pressure, filtered and re-bottled in the original bottle. Light sulfiting, no other inputs are added to the wine.

About the domain :
Gilles Bonnefoy created his estate from scratch in 1997, planting vines from 2001 to 2016 and setting up the winery in 2004. Today, a 10.5-hectare biodynamic estate, set on the outskirts of 2 volcanoes: La Madone and Le Pigeonnier.

About the domain :
Les Vins de la Madone is one of the most exciting experiences in Côtes du Forez, a discreet appellation located between Saint-Étienne and Clermont-Ferrand, at the gateway to the Livradois-Forez natural park. Gilles Bonnefoy strives to capture the sparkling purity of fruit, both in his Gamay reds and in his whites (IGP d'Urfé), a Roussanne and a blend of Sauvignon Blanc and Sauvignon Gris. This radiance, drawn from granite and volcanic soils, is achieved through biodynamic vineyard management (certified in 2008) and vinification partly in whole bunches, with ageing exclusively in vats. The star of this domaine is firmly set.
