Gentle pressing at low pressure, cold settling (7°) for 48 hours, alcoholic fermentation in stainless steel vats (13-18°C).

Breeding

3 to 5 months on its fine fermentation lees with stirring once a week, light filtration and bottling in mid/late winter.

About the domain :

In the heart of Bouchot, an old Pouillyssois winegrowing village, Gilles Chollet took over from his father in 1986. He was joined by his son Séverin in 2010, who is now at the helm of this 14-hectare vineyard.
