Le Domaine du Tremblay est l'une des propriétés appartenant à Chantal Wilk et Jean Tatin, tous deux ingénieurs agronomes. Ils ont créé leurs domaines il y a vingt ans dans une période de restructuration et de renouvellement de l’AOC Quincy. Maroussia, leur plus jeune fille âgée de 25 ans les a rejoint en 2010.
Le Domaine du Tremblay, vieux domaine du Berry, dont on trouve trace dès le moyen âge comme fief d’un écuyer du Duc Jean de Berry, a renoué avec sa tradition vigneronne en exploitant près de 9 ha de vignes situées tant à Brinay qu’à Quincy. Les vieilles Vignes y tiennent une part importante égale à près de la moitié du Domaine. Le vignoble est conduit en viticulture raisonnée à partir de l’observation régulière des vignes en période de végétation. Ainsi la protection phytosanitaire est adaptée aux risques et maladies probables liées au climat de l’année.
Les vins du Domaine du Tremblay, situés sur l’appellation Quincy, sont vinifiés à Brinay dans l’ancienne ferme du château, à la Cave Romane, qui allie tradition et modernité. Bien équipée en matériel performant, pressoir pneumatique, cuverie thermo-régulée, stockage climatisé, elle permet d’élever des vins de qualité depuis 1994.

Issue de 4 parcelles de vieilles vignes de Sauvignon Blanc, la cuvée Sucellus révèle des arômes de fruits jaunes mûrs avec une touche vanillée. La bouche est ronde, onctueuse, agrémentée d'une note épicée liée à l'élevage.
