Total or partial destemming, cold maceration for 6 to 14 days, fermentation with indigenous yeasts, light pumping over and punching of the cap, vatting for 18-30 days, press juice vinified separately then blended with free-run juice, no fining, no filtration, no tartaric stabilization.
Breeding
For 12 months: 40% in barrels (new to 6 wines) and 500-litre tons, 60% in wooden vats for malolactic fermentation, then 4 to 6 months in concrete vats.

Daniel Crochet is one of the most talented winegrowers in the Loire: he cultivates 10 hectares on parcels spread between Bué and Sancerre, making the most of soils of white earth and pebbles. From entry-level to prestige cuvées, all the wines show great consistency. In the white category, Plante des Prés and Chêne Marchand, located in the best sectors of their locality, are among the region's finest Sauvignons. This is a top priority for the wine-lover.

Daniel Crochet comes from a line of winegrowers of which he represents the 4th generation, and is regularly cited in the Guide. At the head of the family estate since 1996, he now manages a 10-hectare vineyard spread between Sancerre and Bué, and has undertaken organic conversion.

About the domain :
On the white earth and caillottes soils of the Bué commune, Daniel Crochet, François' cousin, has been running this quality family estate since 1996. The work here is of the utmost seriousness, with grass-covered vines, ageing on lees and meticulous vinification. The domaine is fortunate to benefit from some of the finest plots in the area, in particular Plante des Prés and Chêne Marchand. We've been impressed by the precision and depth of the reds over the last few vintages, and salute Daniel Crochet's meticulous work. The whites, aged in enamelled vats (and partially in demi-muids for Chêne Marchand), are beautifully crafted, meticulous and calibrated. 2023 is the first vintage to be certified organic.
