In conversion to organic farming since 2020. Biological control since 2018. Soil cultivation, natural grassing, no chemical weedkillers, no anti-rot.

Winemaking

Long, gentle pressing (approx. 3h30), with juice separation and separate vinification, settling after 48 hours of cold stabilization. Yeasted with neutral yeast, fermented in 600L temperature-controlled demi-muids.

Breeding

12 months on fine lees with stirring in demi-muid. Fining with bentonite (natural clay), cellulose plate filtration and bottling after CO2 adjustment.

About the domain :

Julien and Clément Raimbault are the next generation of Sancerre winemakers: trained by the Pinard brothers and Alphonse Mellot, they run the family's 21-hectare vineyard on clay-limestone terroirs. The vines are grown according to the principles of organic agriculture (but without certification). The top-of-the-range cuvées, white Les Chasseignes and Zeste, and red Camille, are made from the oldest vines planted on the best-exposed plots. The very homogeneous range succeeds in both colors: the reds combine power and elegance, the whites are pure and slender. With very reasonable prices, this address is more than just a safe bet: it's a true Gem !

About the domain :

The Raimbault brothers, Julien and Clément, embody the new generation of Sancerre winegrowers. In previous editions, we've highlighted their limpid, modern and uncluttered wines, with a hint of polish. Parameters need to be fine-tuned for the winemakers to emancipate themselves from this technically irreproachable framework and offer a more vibrant definition of sancerre. "We're delighted to see the wines expressing themselves more freely. They are now more relaxed, more gourmet, while retaining the precision that has been their trademark. 2022, a solar vintage, is a balancing act! The pleasure of tasting this wine has earned the domaine its first star.
