"The vigour and minerality of this white gives way to a touch of honey!

An expressive white with lots of plum, passion fruit and quince aromas... The minerality awakens the palate before giving way to pretty gourmet notes of honey. A perfect match for grilled sea bream.

Domaine rated 1*Star (A serious, recommendable production, in line with what one has the right to expect from its appellation(s))

About the domain :

The Lapierre family has been cultivating vines in the commune of Coudoux since the late 18th century. In 1935, Jean Lapierre, then a naval officer, decided to devote himself solely to the land, which was mainly planted with olive trees. In 1952, Max Lapierre took over from his father, transforming the estate into a vineyard. In 1973, his son Yves created Château Saint-Hilaire and became the owner and winemaker. The estate extends over the stony hillsides of the Coudoux range, halfway between Mont Sainte-Victoire and the Alpilles massif. The vines flourish on 55 south-facing hectares, currently undergoing organic conversion.

A pleasant surprise, this white may not be revolutionary, but it's as seductive as it is convincing. After a clean attack, the mid-palate is as round as it is fresh, with a remarkable balance based on a pretty core combining citrus and exotic fruit. The harmony is completed by a touch of fatness that gives a pleasant satiny sensation, while the whole is held together by a fine iodized minerality that prolongs the tension towards a finish with a lemony persistence that gives it an airy feel. A moderate price and the distinguished appearance of the bottle are two additional assets. Ideal as an aperitif with supions en persillade, this white also won over guests with linguine alle vongole. Score = 4.
