Most of the grapes are destemmed and vatted without SO2, followed by fairly long fermentation (5 to 8 weeks) at a temperature of 22/30°C with gentle extraction and regular stirring of the lees. After pneumatic pressing, the free-run wine and press wine are blended according to the vintage. Natural, unfiltered wine.

Aromatic family blending ripe yet crisp red and black berries, caramelized licorice, and slightly waxed Mediterranean spices.

Mouth

A smooth, elegant attack, with a fresh structure and subtle, well-integrated tannins. Aromatic persistence with a mid-palate of undergrowth and complex mineral notes. The finish is beautifully sweet, perfectly balanced with the freshness and fine texture of the raw material.

The Châteauneuf Du Pape Vendange 2021 (80% Grenache and the rest equal parts Syrah and Mourvèdre) is charming, with ripe red and blue fruits as well as peppery garrigue and subtle Provençal notes. Ripe, medium-bodied to full-bodied, beautifully textured on the palate with supple tannins, it will shine right from the start.
