Only 3,000 bottles of Compostelle blanc are produced from plots of land where the grapes ripen slowly but optimally, on very filtering Villefranchian pebble soils. Its genesis also includes several months in barrels from the Sauternes region, in particular Château d'Yquem. It opens with aromas of sweet spices (bourbon vanilla), and shows roundness, freshness and a beautiful aromatic complexity combining citrus fruits and white flowers. An elegant, charming white that's ready to drink now!

Nose
opens with aromas of sweet spices (bourbon vanilla) which, after swirling, give way to the white fruits (pear, peach) typical of Roussanne.
Mouth
Ageing on lees with bâtonnage brings roundness and aromatic complexity. Notes of cinnamon and vanilla mingle with pear, lingering beautifully on the finish.

"Luc Baudet had the audacity to settle in this region still strongly marked by the cooperative movement. Attached to the Costières de Nîmes region, he settled at Mas Neuf. The richness of the terroirs enables him to offer three types of cuvée: Rhône Paradox, based on freshness and purity of fruit; Compostelle, the result of selection from old vines and grapes from the best plots. And finally, Armonio, born of a meeting with Louis Mitjavile (Tertre Roteboeuf, in Saint-Emilion, among others).
