This amateur red wine combines strength and finesse... The palate is silky and generous with black fruit, garrigue and spice notes. An original blend of Cabernet Sauvignon, Grenache and Cinsault, the wine is worked with precision, aged for 12 months in amphora and barrels. A well-balanced cuvée with good ageing potential and a long, powerful finish. Terroir and fruit!

Destemmed harvest, fermented with indigenous yeasts. Cabernet-Sauvignon vatted for 40 days of maceration in truncated-cone tanks, punctuated by daily dynamization and 2 light delestages. Unfined and unfiltered.

About the domain :
In the heart of the Ardèche, Benoît Chazallon and his wife Florence cultivate forty hectares of organically grown vines. The estate boasts a wide range of grape varieties, all vinified using indigenous yeasts, to produce several cuvées bottled without filtration. We particularly appreciated the wines in the Les Confidentielles range (Florence, L'Audacieuse and Madame de), made exclusively from southern grape varieties.

The medieval Château de La Selve was originally (13th c.) a fortified house, then a hunting lodge for the Duke of Joyeuse, before becoming a winegrowing estate (40 ha today, certified organic). Benoît Chazallon has been at the helm since 2002, following in his parents' footsteps.

Florence and Benoît Chazallon's vineyards in the Vivarais region have been completely redesigned around the family's 13th-century fortified château, and they apply themselves passionately to the production of tricolored wines that carry the colors of the Ardèche hillsides high. The range is divided into two categories: Les Classiques, easy-going, fruit-driven wines, and Les Confidentielles, more ambitious, well-built reds. The Revue du Vin de France named Château de la Selve "Discovery of the Year 2012".

A pleasant re-discovery of this Vin de Pays with predominant Cabernet-Sauvignon. After the requisite two years in the cellar, it seems to have reached maturity. Of course, the palate is still seductive, powerful and voluminous. Fruity with a hint of spice and vegetal notes. Nevertheless, the partial aging in amphora gives a little more suppleness and depth to the robust, tannic structure. The finish is persistent and somewhat astringent. Drink after two hours' decanting at 16°, preferably with hearty dishes, such as an American-style beef marinade with melting potatoes. Note of 3.7, as the grapes are partially harvested by hand for a so-called "organic" cuvée which, incidentally, costs close to 15€...
