Domaine de Fondrèche
The vineyards of Domaine de FondrècheThe 38-hectare estate is managed according to organic farming principles, with the aim of creating harmony between the vine, the soil and its direct environment. It is based on three sites in the communes of Mazan, Mormoiron and Saint Pierre de Vassols. No chemical weedkillers are used, and grass is frequently planted between the rows. The soil is fertilized with 100% natural organic fertilizer. The estate is currently undergoing organic conversion.
Visit Domaine de Fondrèche has a cellar that matches its approach to wine. The basic principle is to be functional while respecting the quality of the grapes. The cellars are air-conditioned to ensure that the wines are matured and preserved in the best possible conditions.

In white, Persia is produced from the estate's oldest vines on a parcel of Roussanne. The nose is very mineral, with scents of white stone fruit, exotic fruit and white flowers with a hint of menthol. A full-bodied cuvée, with a fresh, saline attack and both richness and integrated acidity. Pair with asparagus with smoked bacon or veal sweetbreads, and you'll delight the taste buds of fine gourmets!

The "nature" cuvée is a blend of Grenache, Syrah, Mourvèdre and Cinsault. For Sébastien Vicenti, "making a wine without sulfur and free of all technology is a real thrill! You learn a lot of things, not least how to work properly. When you can't take medicine, you shouldn't get sick." We confirm his words, as the expression of fruit here is remarkable, with notes of red fruit and violets inviting us to discover a delicious nectar on the palate, fresh, round, with silky tannins. We want more!
