Blend made after the end of alcoholic fermentation, malolactic fermentation carried out on the blend, very little SO2 added (20 mg) at bottling, i.e. 43 mg/l in total.
Breeding
In 228-liter and ½-muid 400-liter barrels, with very light stirring (15 seconds per barrel) using a stainless steel whisk, measured from top to bottom, once every 2 weeks for a period of 2 months.

About the domain :
Oenologist Maxime Dancoine cultivates only a tiny vineyard, located in Aiton, at the western end of the Maurienne massif. Nevertheless, his wines are beginning to attract the attention of wine lovers. Highly meticulous, biodynamically inspired and certified organic since 2017, it is part of the diversity and ambition that characterize the generational renewal of Savoyard viticulture. This approach takes on its full meaning in light of the new plantings, which give priority to endemic grape varieties such as Jaubertin and Blanc de Maurienne.
