Grapes destemmed and crushed before vatting. After fermentation and juice draining, devatting is carried out manually, without pumping, to avoid any trituration that might lead to the release of aggressive tannins from the pips. Pressing is gentle.

About the wine:
A full-bodied wine with bramble and spice aromas, dense on the palate with a drying finish. Best kept to allow the still very present tannins to mellow.
About the domain :
Étienne Sipp manages this 40-hectare estate on the hills surrounding Ribeauvillé, which includes the Kirchberg and Osterberg grands crus. The big bottles here are of course the Rieslings, as the terroirs of the Ribeauvillé ban are wonderfully suited to this grape variety, particularly in 2013, 2014 or 2017, wines that age perfectly over several decades, as the estate can demonstrate by opening old bottles from the 1970s, bearing in mind that at the time viticulture was far from complying with today's organic canons (the estate is now certified). In the entry-level range, the wines express the saline character that will soon be demanded by the new communal appellations.

About the domain :
Passionate about his terroirs, Étienne Sipp cultivates a vast organic vineyard, including two fine grands crus: Kirchberg de Ribeauvillé and Osterberg, vinified in a spirit of ageing, always refined. The parcel-by-parcel work carried out over the last few years is highly appreciated. We prefer the estate's whites, where Riesling is king. The vineyard's heritage could take us even further, and some of the wines are disappointing: with regret, we are withdrawing the star this year.
